Herb Ranch Dressing
Makes 1 1/2 cups. 5 minute prep time.
Goes great on most any salad (check out this BLT Salad), or halve the amount of coconut milk and use it as a sandwich spread!

1 cup mayonnaise
½ cup full-fat coconut milk
2 cloves garlic, grated
3 tbsp fresh parsley, chopped
2 tbsp fresh chives, chopped
2 tbsp fresh dill, chopped
1 tbsp lemon juice (ideally freshly squeezed)
½ tsp black pepper, freshly cracked
½ tsp sea salt

Combine all ingredients in a mason jar and shake vigorously.
