Baked Brie with Nectarines and Pecans
Makes 2 servings. 20 minute cook time.
Goes great with a fresh baguette.

1 wheel of brie
1 nectarine
⅓ cup pecans
1 tbsp butter

Pre-heat oven at 350 F.
Cut nectarine into even slices, about ½ inch think.
Slice brie in half horizontally (to get 2 disks) and place one half, cut side up, in a baking dish with a cover.
Toss pecans in a non-stick frying pan over medium heat for about 3 minutes. Remove from pan and set aside.
Melt butter in same pan and add nectarine slices. Cook for about 2 minutes, flip nectarines and cook for another minute or so.
Place nectarines on brie half, add pecans and cover with other brie half. Cover baking dish.
Bake in pre-heated oven for 15 minutes.
